These muffins are dairy free, egg free, soy free, and vegan. Healthy, delicious, and simple to make! They’re best served warm, so heat ’em up in the microwave for 25 seconds if you’re not serving them fresh out of the oven.
1 1/2 cup organic whole wheat pastry flour
1/2 cup raw cane sugar
1 teaspoon salt
2 teaspoons baking powder
3/4 cup almond milk
1/4 cup unsweetened apple sauce
1 cup vegan chocolate chips
1/4 cup cherry flavored dried cranberries
1 teaspoon organic vanilla extract
2 tablespoons brewed organic coffee (optional)
Preheat your oven to 375°F.
Mix dry ingredients. Add milk, applesauce, vanilla extract, and coffee. Mix well. Fold in chocolate chips and cranberries. Divide evenly into muffin pan, and bake for approximately 20 to 25 minutes. Makes about 9 muffins.
