    Dairy Free Lemon Blueberry Oatmeal

    One of my favorite combinations during the spring and summer seasons is lemon and blueberries. The tangy, citrusy zing of the lemon paired with the sweetness of fresh blueberries awakens the palate and delivers an aroma synonymous with sunshine. This dairy free oatmeal is loaded with fresh blueberry and lemon flavor, and will be sure to add a bit of spring cheer to your morning.

    Dairy Free Lemon Blueberry Oatmeal

    ½ cup old fashioned oats
    1 cup water
    ½ teaspoon amber agave nectar (honey can also be used here)
    ¼ cup fresh blueberries, or frozen ones that have been thawed
    zest of half of a lemon (I like a lot of lemon. You can use less if you prefer.)
    a dash of cinnamon

    Combine your oats and water in a microwave safe bowl. Cook on high power for about two minutes. Be sure to watch it closely, as it will start to boil over towards the end. Stir in remaining ingredients, and let sit for five minutes before eating.

    This will make one serving. Enjoy!

      I never thought to add lemon to oatmeal, sounds divine with the blueberries!
      I use a 1:1 ratio of oats to water. 1/2 cup oats with 1/2 cup water cooked at 50% power for 1-2 minutes.
