Being dairy free doesn’t mean you have to live without pizza, thanks to Daiya cheese. It melts, it stretches, and best of all it TASTES GOOD. This dairy free and vegan pizza is not only healthier than most other pizzas you’ll eat, but it’s also extremely tasty and filling. (tip: make double the onions and mushrooms to add to other meals later! Will keep in the fridge for a couple of days)
1 pre-cooked 12 inch Whole wheat pizza crust (we like Mama Mary’s)
1 1/2 to 2 cups pizza sauce (we used Mama Mary’s here too)
1 1/2 cups dairy free shredded mozzarella style cheese (we LOVE Daiya!)
1 lb sliced baby bella mushrooms, cleaned
1 onion, thinly sliced
1 large clove or 2 small, minced
Preheat your oven to 425°F. Meanwhile, heat a medium sized skillet over medium heat. Heat about a tablespoon of oil in the skillet, and add the onions and mushrooms. Sauté until the onions are caramelized and the mushrooms are brown. Add the garlic, and cook for one minute more. Remove from heat.
Remove your pizza crust from the package, and brush with a bit of olive oil. Place the crust on a nonstick baking pan or pizza stone. Spread pizza sauce evenly over crust, sprinkle evenly with the cheese, then top with the mushroom mixture. Bake for 7-10 mins, or until cheese is melted. Let rest for 5-10 minutes before slicing.
