Egg and Pepper Roll – Created by my 5-year-old

This Egg and Pepper Roll was the creation of my 5-year-old. His latest favorite thing to eat is pepper and egg sandwiches, and today he suggested we try it in a hot dog roll. He doesn’t like hot dogs (I’m more than ok with that), but loves when I grill the roll with butter.

Preparation is simple. Thinly slice (and seed) a green bell pepper and saute in olive oil until slightly browned and soft. In a separate pan, you can scramble up some eggs to your liking.

I reused my pan that I used to saute the peppers to grill the hot dog roll. I spread some Earth Balance on each side of the roll, and cooked over medium heat until they are a nice golden brown. Fill your rolls with a bit of the pepper and some of the eggs, and enjoy!
