Easy Marinara

It was one of those days.  Baby cried all day, chores got neglected, and then came dinner time. Make dinner? Ugh.  Not tonight. But I decided I could whip up a very quick marinara and use it to dress up store bought gnocci and sausage. Very simple and delicious, when you’re having one of those days.

28 oz can ground peeled tomatoes
4 tablespoons olive oil
3/4 finely chopped shallot
5 cloves garlic, minced
1 teaspoon crushed fennel seeds
pinch dried crushed red pepper flakes
1 teaspoon dried italian seasoning
1/3 cup white wine
1/2 cup chopped fresh basil, and more for garnish

Heat oil in saucepan. Saute shallot, garlic, fennel, red pepper, and italian seasoning until shallot is soft. Add wine, tomatoes and basil. Simmer for about ten minutes. Season with salt and pepper, and serve with over your favorite pasta. Garnish with chopped fresh basil.
