I got this idea from a picture that I recently saw on Pinterest. Easy, tasty, healthy, and a fun food for the kiddies to eat! Load 'em up with your favorite toppings, and you have a great way to get the little ones to eat their veggies. And yes, that's a bite missing. I couldn't hold back 🙂
2 large russet potatoes, scrubbed and poked with a fork a few times
vegetable oil
kosher salt
½ cup pizza sauce
½ cup mozzarella Daiya dairy-free shredded cheese (new to Daiya? Read my review)
your toppings of choice (my veggie drawer was low, so i opted for just green onion)
Preheat your oven to 425°F. Rub the potatoes with a little bit of the oil, then with a bit of the salt. Roast the potatoes for about 45-50 minutes, until the potatoes are soft. Take them out of the oven and slice them evenly in half. Scoop out the flesh (leave a bit in) and reserve for another use.
Fill each potato with two tablespoons of sauce, and top with a sprinkle of Daiya and your choice of toppings. Bake for about 10 minutes, until the cheese is melted. Let them cool for a few minutes and enjoy!
