Pumpkin Overnight Oats

Creamy pumpkin, nutty oats, and warm autumn spices mingle overnight for a delicious breakfast that's ready for you when you wake up.

Ingredients
 

  • cup old fashioned rolled oats
  • cup pure pumpkin puree pure pumpkin, NOT pumpkin pie filling
  • cup almond milk I used unsweetened. You can use your milk of choice.
  • 1 teaspoon chia seeds optional
  • ¼ teaspoon pumpkin pie spice
  • 1 teaspoon pure maple syrup
  • toppings of your choice see post above for suggestions

Instructions
 

  • Mix all of your ingredients together in a mason jar or a small bowl.
  • Cover tightly and let sit overnight.
  • In the morning, give the oats a good stir.
  • Add your toppings of choice and enjoy!

Notes

It should be noted that this recipe has little added sugar from maple syrup. If the oats aren't sweet enough for you, feel free to stir in some more maple syrup before enjoying.
