Easy Slow Cooker Chicken Chili

A simple chicken chili prepared in the slow cooker that's filling, nourishing, and kid-friendly.

Ingredients
 

  • 28 oz fire roasted diced tomatoes
  • 16 oz tomato purée
  • 2 large boneless skinless chicken breasts
  • 1 large onion peeled and diced
  • 1 yellow pepper diced
  • 1 red pepper diced
  • 14 oz black beans canned or precooked, drained and rinsed
  • 14 oz red kidney beans canned or precooked, drained and rinsed
  • 1 teaspoon kosher salt
  • 2 teaspoon dried oregano
  • 2 tsp chili powder
  • 1 tablespoon cumin
  • 3 garlic cloves peeled and minced

Instructions
 

  • Add all of your ingredients in to your slow cooker and mix well.
  • Cook on low for 8 hours, stirring occasionally.
  • Taste for salt and adjust to your taste.
