Dairy-Free Stewed Apples with Cinnamon

These easy stewed apples are made with just 4 ingredients and come together in only 15 minutes. Soft, naturally sweet, and gut-healthy, they're perfect for serving over yogurt, oatmeal, or chia pudding.

Ingredients
 

  • 2 large apples see above for suggestions
  • 1 teaspoon cinnamon
  • 1 tablespoon pure maple syrup
  • 2 tablespoons water
  • 1 ½ tablespoons lemon juice half a lemon
  • pinch of kosher salt

Instructions
 

  • Combine all of your ingredients in a small saucepan. Stir gently until the apples are evenly coated in the cinnamon.
  • Bring to a gentle simmer over medium heat.
  • Reduce the heat to low, cover, and cook for 10-15 minutes, stirring occasionally, until the apples are fork-tender and to your preferred softness. Add small splashes of water if the apples get too dry. They'll release their juices as they cook.
  • Serve warm or chilled.

Storage: Store leftovers in the fridge up to 5 days in an airtight container. Reheat on the stove or in the microwave, or serve chilled.
