1 lb ground chicken 2 teaspoon chili powder 1 teaspoon ground cumin 1 teaspoon smoked paprika or ¾ teaspoon regular + ¼ teaspoon cumin if you don't have smoked ½ teaspoon dried oregano ½ teaspoon garlic powder ½ teaspoon onion powder ¾ teaspoon kosher salt ¼ teaspoon black pepper 1 tablespoon tomato paste ⅓ cup chicken stock 1 -2 teaspoon freshly squeezed lime juice 1 tablespoon avocado oil olive oil works
Heat the oil in a large skillet over medium heat.
Add the chicken and break it into small pieces using a wooden spoon or a meat chopper.
Cook until the chicken is cooked through, about 5-8 minutes, and the internal temperature reaches 165°F.
Add the spices and tomato paste. Cook for 2 minutes, stirring constantly.
Pour in the chicken stock and stir to combine. Simmer gently, about 2-3 minutes until the stock is heated through and the chicken is nice and saucy.
Finish with the freshly squeezed lime juice and enjoy!
