Ground Chicken Taco Meat

Ingredients
 

  • 1 lb ground chicken
  • 2 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika or ¾ teaspoon regular + ¼ teaspoon cumin if you don't have smoked
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¾ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 tablespoon tomato paste
  • cup chicken stock
  • 1 -2 teaspoon freshly squeezed lime juice
  • 1 tablespoon avocado oil olive oil works

Instructions
 

  • Heat the oil in a large skillet over medium heat.
  • Add the chicken and break it into small pieces using a wooden spoon or a meat chopper.
  • Cook until the chicken is cooked through, about 5-8 minutes, and the internal temperature reaches 165°F.
  • Add the spices and tomato paste. Cook for 2 minutes, stirring constantly.
  • Pour in the chicken stock and stir to combine. Simmer gently, about 2-3 minutes until the stock is heated through and the chicken is nice and saucy.
  • Finish with the freshly squeezed lime juice and enjoy!
