Simple Lemon Garlic Marinated Chicken

Healthy, flavorful chicken with a quick lemon garlic marinade. Perfect for high protein meal prep, salads, sandwiches, and weeknight dinners.

Ingredients
 

  • 3 lbs boneless skinless chicken breast
  • 6 tablespoon olive oil avocado oil also works
  • ¼ cup fresh lemon juice 1 to 1 ½ lemons depending on size
  • 4 garlic cloves
  • zest of 1 lemon
  • 1 tsp salt
  • 1 tsp black pepper
  • ¼ cup fresh chopped parsley optional, for garnish

Instructions
 

  • Whisk together the olive oil, lemon juice, zest, garlic, salt, and pepper.
  • Add your chicken to the marinade and stir well until the chicken is evenly coated.
  • Cover the chicken and marinate at least 4 hours or overnight for best results.
  • Grill your chicken or sear it in a skillet for 6-8 minutes per side or until cooked through. It should reach an internal temperature of 165°F. Garnish with parsley and a few lemon wedges if you'd like.
  • Serve immediately or let it cool, then store it in the refrigerator for meal prep. (See above for serving and storage suggestions)

Notes

Chicken thighs can be used, but they may take longer to cook. Nutrition estimates will be higher with thighs than with breasts.
If I'm grilling this for salads, I like to cut the chicken breasts into strips like they do at takeout restaurants. This will shorten the cook time significantly, so be careful not to overcook it.
