Dairy - Free Citrus Quinoa Salad
makes one salad
2 cups baby lettuce or spring mix
½ cup thinly sliced cucumbers
¼ cup mandarin oranges (drained if in juice)
¼ cup sliced strawberries
¼ cup cooked quinoa
sliced roasted almonds (optional)
Layer ingredients in a big bowl. Top with dairy free balsamic dressing (recipe follows).
Easy Dairy - Free Balsamic Dressing
1 cup extra virgin olive oil
½ cup balsamic vinegar
¼ cup light agave syrup
Whisk together all ingredients and chill. Whisk or shake before serving.
