Dairy – Free Citrus Quinoa Salad
makes one salad
2 cups baby lettuce or spring mix
1/2 cup thinly sliced cucumbers
1/4 cup mandarin oranges (drained if in juice)
1/4 cup sliced strawberries
1/4 cup cooked quinoa
sliced roasted almonds (optional)
Layer ingredients in a big bowl. Top with dairy free balsamic dressing (recipe follows).
Easy Dairy – Free Balsamic Dressing
1 cup extra virgin olive oil
1/2 cup balsamic vinegar
1/4 cup light agave syrup
Whisk together all ingredients and chill. Whisk or shake before serving.
