Quiche is a food that reminds me of my grandma and is something that I hardly ever make. My son is ten years old and never had quiche in his life before I made this, but for some reason I recently had a big craving for it. This dairy-free quiche is delicious served as breakfast, lunch, or dinner, and leftovers reheat very well. I like to prep this ahead of time for an easy weekday breakfast, or a quick lunch with a side salad. My favorite part of this recipe is that it’s loaded with bacon flavor, but there are only 4 slices in the whole recipe.
