Quiche is a food that reminds me of my grandma and is something that I hardly ever make. My son is ten years old and never had quiche in his life before I made this, but for some reason I recently had a big craving for it. This dairy-free quiche is delicious served as breakfast, lunch, or dinner, and leftovers reheat very well. I like to prep this ahead of time for an easy weekday breakfast, or a quick lunch with a side salad. My favorite part of this recipe is that it's loaded with bacon flavor, but there are only 4 slices in the whole recipe.
Dairy Free Bacon Onion Quiche
Ingredients
- 1 frozen 9 inch pie crust I used this kind that came in an aluminum, oven ready pie container
- 4 slices cooked bacon chopped
- half of a small onion about ⅓ cup, sauteed in 2 teaspoons olive oil or your favorite dairy free butter
- 6 eggs
- 1 cup unsweetened almond milk
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Preheat your oven to 375°F . Place your pie crust on a cookie sheet.
- Whisk your eggs, almond milk, salt and pepper in a large mixing bowl.
- Gently stir in your bacon and onion, and pour the mixture in to your pie plate.
- Bake the quiche for about 35-40 minutes, until the top is lightly browned and the center is no longer jiggly.
