You only need three ingredients to make this crockpot chicken. No chopping, dicing, or prep is required.
- chicken bone broth
- taco seasoning
- boneless skinless chicken
I like to use bone broth but chicken stock will also work for this recipe. For taco seasoning, my preferred brand is Siete but feel free to use your favorite. If you're serving this to kids or are sensitive to spicy foods I'd recommend using a mild taco seasoning. But if you like a little heat, feel free to kick it up a notch and use a spicy mix!
Instructions
Preparing this couldn't be easier. Simply add your ingredients into the crockpot, turn it on, and you're done!
- Add chicken to your crockpot with bone broth.
- Sprinkle all over with taco seasoning.
- Cover and cook.
- Shred the chicken using two forks and mix it with the broth and seasonings.
After mixing the shredded chicken with the broth and seasonings, I like to let it rest while I prepare my tortillas and toppings. This helps the chicken absorb even more of that delicious flavor.

- Onions - a very small amount, finely diced
- Cholula hot sauce - this is great to add some heat to the adult tacos while keeping the ones for the kiddos mild
- Fresh lime - a squeeze of fresh juice from a lime wedge adds a bright acidity to balance everything out

- Quesadilla- stuff it in a tortilla with some refried beans or dairy-free cheese and grill in a pan until toasty and crispy.
- Burrito Bowls- serve it in a bowl with rice, beans, roasted veggies, fresh lettuce, tomatoes, guacamole, and cilantro. It's also great with my avocado tomato salad.
- Enchiladas- roll it up in a tortilla, top with enchilada sauce and dairy-free cheese, and bake until the cheese is melted.
- Nachos - spoon it over tortilla chips with some beans and dairy-free queso, then bake until toasted and melty.
Storing Leftovers
The USDA recommends using leftover chicken within three to four days. Cover leftovers immediately and store them in the refrigerator for later use. You can also freeze the cooked chicken for up to 3 months, although the texture may change a bit.
