    Crockpot Shredded Chicken for Tacos

    Need an easy recipe that requires minimal work? This crockpot shredded chicken for tacos is exactly that. You only need three ingredients and about five minutes to make it, and it can be used in so many dishes in addition to tacos.

    Not only is this great in tacos, but it's also perfect for quesadillas, burrito bowls, and enchiladas. It's also a great option for make-ahead meal prep, saving you more time in the kitchen! Pair it with my mango salad and some beans for a delicious, nourishing bowl with a taste of the tropics.

    Ingredients For Crockpot Shredded Chicken Tacos

    You only need three ingredients to make this crockpot chicken. No chopping, dicing, or prep is required.

    • chicken bone broth
    • taco seasoning
    • boneless skinless chicken

    I like to use bone broth but chicken stock will also work for this recipe. For taco seasoning, my preferred brand is Siete but feel free to use your favorite. If you're serving this to kids or are sensitive to spicy foods I'd recommend using a mild taco seasoning. But if you like a little heat, feel free to kick it up a notch and use a spicy mix!

    Instructions

    Preparing this couldn't be easier. Simply add your ingredients into the crockpot, turn it on, and you're done!

    1. Sprinkle all over with taco seasoning.

    1. Shred the chicken using two forks and mix it with the broth and seasonings.

    After mixing the shredded chicken with the broth and seasonings, I like to let it rest while I prepare my tortillas and toppings. This helps the chicken absorb even more of that delicious flavor.

    Favorite Chicken Taco Toppings

    Fresh toppings are always what take tacos to the next level. Here's what I like to use:

    • Lettuce - freshly chopped iceberg or romaine
    • Tomatoes- seeded and diced tomatoes on the vine
    • Avocado - creamy, smooth, and balances out the spices
    • Cilantro - the more the better
    • Onions - a very small amount, finely diced
    • Cholula hot sauce - this is great to add some heat to the adult tacos while keeping the ones for the kiddos mild
    • Fresh lime - a squeeze of fresh juice from a lime wedge adds a bright acidity to balance everything out

    I prefer these without any cheese but if you're looking for a dairy-free option try Violife Just Like Mexican Shreds. To keep my tacos gluten-free I like to use organic non-GMO corn tortillas.

    Other Ways To Use This Shredded Taco Chicken

    This is a great meal prep option because you can enjoy it one day in tacos, and then use the leftovers later to create a completely different meal. Here are some other ways I enjoy it:

    • Quesadilla- stuff it in a tortilla with some refried beans or dairy-free cheese and grill in a pan until toasty and crispy.
    • Burrito Bowls- serve it in a bowl with rice, beans, roasted veggies, fresh lettuce, tomatoes, guacamole, and cilantro. It's also great with my avocado tomato salad.
    • Enchiladas- roll it up in a tortilla, top with enchilada sauce and dairy-free cheese, and bake until the cheese is melted.
    • Nachos - spoon it over tortilla chips with some beans and dairy-free queso, then bake until toasted and melty.

    Storing Leftovers

    The USDA recommends using leftover chicken within three to four days. Cover leftovers immediately and store them in the refrigerator for later use. You can also freeze the cooked chicken for up to 3 months, although the texture may change a bit.

    Can I use frozen chicken in the crockpot?

    The USDA recommends thawing chicken before putting it in the slow cooker to ensure it reaches the proper cooking temperature and avoid food-borne illness. If you use frozen chicken, you may need to cook it longer. Check that your chicken is thoroughly cooked and has reached an internal temperature of 165°F.

    How many tacos will this make?

    This will make enough shredded chicken to fill 16 small corn tortilla tacos.

    Crockpot Shredded Chicken for Tacos

    You only need 3 ingredients and 5 minutes to prepare this shredded chicken for tacos. Just add your ingredients to your crockpot, cook, and you're done!

    Ingredients
     

    • 2 lbs boneless skinless chicken breast
    • 1 cup chicken bone broth stock also works
    • 2 oz taco seasoning

    Instructions
     

    • Pour the broth into your slow cooker.
    • Add in the chicken, then cover it with the taco seasoning.
    • Cover your slow cooker and cook for 6 hours on low or 3 hours on high.
    • Once the chicken is cooked through it will shred easily. Use two forks to shred the chicken, then give everything a good mix to coat the chicken with the seasoning and broth.
    • Serve on hard or soft taco shells with your favorite toppings. (see the post above for suggestions!)

    Notes

    Note: if your taco seasoning does not contain salt you can add some to your liking at the end of cooking.
