    These Vegan Pumpkin Pie Overnight Oats are like eating pumpkin pie for breakfast, without all the sugar and guilt. They're also vegan, gluten free, and dairy free. You only need 5 minutes to prepare them for an easy, quick, delicious breakfast that's ready for you when you wake up in the morning.

    If you're looking for a quick breakfast option, these oats could not be more simple. There's no cooking required, and preparation and cleanup couldn't be easier. This is a great option to grab and go, or if you're short on time in the morning.

    The oats are soaked overnight until they absorb all the liquid and become tender and soft. I use almond milk, but feel free to use the milk of your choice. I add real pumpkin in this recipe with warm pumpkin spices to add plenty of natural flavor to the oats. A touch of maple syrup helps sweeten it all up a bit.

    What's in Overnight Pumpkin Oats?

    For this easy overnight oat recipe you'll need:

    • ⅓ cup old fashioned rolled oats
    • ⅓ cup pumpkin puree
    • ⅓ cup unsweetened almond milk
    • 1 teaspooon chia seeds
    • ¼ teaspoon pumpkin pie spice
    • 1 teaspoon pure maple syrup
    • toppings of your choice (see below for suggestions)

    How to Make Overnight Pumpkin Oats

    1. Mix all of your ingredients in a jar or bowl.
    2. Cover and let sit overnight.
    3. In the morning, give the oats a good stir.
    4. Enjoy as-is or add your favorite toppings.

    Great options to top your oats are chocolate chips, walnuts, pecans, granola, raisins, grated apple, dairy-free caramel, sliced bananas, dried cranberries, vegan yogurt, or coconut whipped creme.

    What Type Of Oats Should I Use?

    I like old fashioned rolled oats for this recipe.

    Why do you add chia seeds to these overnight oats?

    I find that chia seeds help make this recipe creamier and thicker. They also add fiber, which helps keep me full for longer.

    Can I make these overnight oats without chia seeds?

    Yes! Feel free to make your overnight oats without the chia. They'll still be creamy and delicious.

    Can I heat up overnight oats?

    Yes! If you prefer your oats to be warm just pop them into the microwave for 30-60 seconds (depending on your microwave).

    What if I don't have pumpkin pie spice?

    You can substitute the pumpkin pie spice with ½ teaspoon ground cinnamon and ¼ teaspoon ground nutmeg.

    Can I make these overnight oats with steel cut oats?

    • ⅓ cup old fashioned rolled oats
    • ⅓ cup pure pumpkin puree pure pumpkin, NOT pumpkin pie filling
    • ⅓ cup almond milk I used unsweetened. You can use your milk of choice.
    • 1 teaspoon chia seeds optional
    • ¼ teaspoon pumpkin pie spice
    • 1 teaspoon pure maple syrup

    Instructions
     

    • Mix all of your ingredients together in a mason jar or a small bowl.
    • Cover tightly and let sit overnight.
    • In the morning, give the oats a good stir.
