I add real pumpkin in this recipe with warm pumpkin spices to add plenty of natural flavor to the oats. A touch of maple syrup helps sweeten it all up a bit.

  2. Cover and let sit overnight.

Great options to top your oats are chocolate chips, walnuts, pecans, granola, raisins, grated apple, dairy-free caramel, sliced bananas, dried cranberries, vegan yogurt, or coconut whipped creme.
