Smoothies are my favorite "fast food" to make at home. You can make them sweet and dessert-like, or super healthy and full of greens. They're a great way to meet your daily servings of fruit and vegetables, and kids often love them!
This is my favorite dairy-free green smoothie, and I usually blend a batch to have in the refrigerator for a few days. I like to have this one for breakfast, with a couple of hard boiled eggs. If it tastes a little too "green" to you, try adding a bit more pineapple.
My Favorite Dairy-Free Green Smoothie
makes 3 smoothies
16 oz water
juice of 1 lemon
5 - 6 ounces baby spinach, washed
half of an english cucumber
3 stalks of celery, cleaned and trimmed
2 cups frozen pineapple chunks
Add all ingredients to a high powered blender (I use this Vitamix) in the order listed. Gradually work up to high speed, using the plunger as needed. Blend until smooth. Leftovers will keep in the fridge for a few days.
