    Vegan Spicy Salad

    This Vegan Spicy Salad is delicious if you're craving Tex-Mex style flavor and heat, but want to keep it healthy. It's loaded with fresh vegetables, protein from black beans, and plenty of flavor from lime and jalapeños. I like to add a bit more heat and drizzle it with some buffalo sauce. If you're following a whole foods diet like Whole 30, or a lower carb diet like South Beach, this will fit in to your meal requirements perfectly while still leaving you feeling full and satisfied.

    You can prepare this salad in minutes, making it the perfect, no-cooking-required summer meal. I love it for a light lunch, or as a side with my Sweet Potato Quesadillas and Keto Friendly Margarita. It's also great rolled up in a tortilla with some vegan cheese shreds. Feel free to double the recipe to bring to summer cookouts or potlucks!

    If you'd like to serve this to kids that may be sensitive to the heat, you can take out their portion before adding in the jalapeños. My little guy likes it as a side to some vegan cheese quesadillas with salsa for dipping. It packs great in this lunch box set for summer camp, school lunch, or picnics.

    For variations of this recipe, you can also add in bite sized chunks of watermelon, some vegan cheese, diced cooked sweet potato, cooked corn, or some grilled peaches. To make it ahead, you'll want to toss the salad together and store it in the refrigerator covered. Do not top it with avocado, oil, or juice until just before you eat it, or the vegetables will be wet and soggy.

    Ingredients
     

    • buffalo sauce drizzle for garnish (optional)
    • 6 cups spring mix
    • 1 bell pepper Sliced. Yellow or red works well.
    • 1 jalapeño sliced thin
    • 1 cup cherry tomatoes halved
    • 1 cup black beans Cooked, drained, and rinsed. Can be omitted for a low carb option.
    • ¼ cup cilantro chopped
    • juice of 2 limes
    • 1 tablespoon olive oil
    • 1 avocado diced

    Instructions
     

    • Add all of the vegetables in to a big bowl and give it a toss.
    • Combine the oil and lime juice in a small bowl.
    • Drizzle salad with oil, lime juice, and buffalo sauce if using.
    • Garnish with avocado and enjoy!

It’s loved by adults and kids alike, and can be prepared the night before. Feel free to double the recipe if you’d like to make it for a busy week ahead.

    You can make this dish gluten-free by substituting with gluten-free bread. Leftovers will keep in the refrigerator for a few days.

    Ingredients
     

    • 6 oz french bread (one small loaf)
    • 5 large eggs
    • 1 ½ cup unsweetened almond milk (other plant based milks will work)
    • 3 tablespoon sugar
    • ½ teaspoon cinnamon
    • 1 tsp pure vanilla extract
    • 1 pinch salt

    Instructions
     

    • Grease, spray, or oil a small baking dish. The dish should hold at least 2 quarts.
    • Cut your bread into bite sized pieces and spread them evenly on the bottom of your dish.
    • In a separate bowl, whisk together the remaining ingredients.
    • Pour the egg mixture evenly over the bread, and press the bread down a bit to make sure it’s all covered. At this point you can refrigerate it overnight, or bake it right away. I prefer to refrigerate it overnight because the flavors all have a chance to come together.
    • When you’re ready to bake it, preheat your oven to 350°F.
    • Bake your casserole on the middle rack of the oven for about 35-45 minutes, until the center is cooked through and the casserole starts to puff up. It’s delicious served fresh out of the oven with warmed maple syrup! Leftovers will keep in the refrigerator for a few days.

This Dairy Free Oatmeal Bowl is a delicious treat for breakfast (or anytime, really), and it tastes like an indulgent treat while remaining pretty healthy.     For the oats:

    • 1 ¾ cup unsweetened almond milk or your milk of choice
    • 1 teaspoon cocoa or cacao powder
    • 1 cup quick oats
    • Pinch of salt
    • 2 scoops 20 grams collagen peptides (optional)

    For toppings:

    • Half banana seared in 1 teaspoon coconut oil over medium heat for about 2 minutes per side, until browned
    • 1 tablespoon nut butter
    • 1 teaspoon cacao nibs or chocolate chips
    • 1 teaspoon shredded coconut

    Instructions
     

    • Bring your milk to a simmer over medium heat, stirring often to prevent burning. Add in your oats, cocoa, and salt.
    • Cook for about 1 minute, then stir in your collagen peptides if you’re using them.
    • Cover the pan and remove it from the heat. Let it stand off the heat for a few minutes.
    • Put your oats in a medium sized cereal bowl and layer your toppings. Serve hot.

    If you're craving a taste of summer and looking for something fruity, light, and refreshing, this dairy free Tropical Yogurt Bowl is for you. I love this for breakfast or dessert, and it's very simple to prepare. You can layer it all in to a small mason jar to bring it for a snack at work, or pack it in a school-safe container for the kids (we use this one almost every day).

    Thankfully there are plenty of dairy free yogurt options available to us now. I'm using the mango flavored option from Oui in this yogurt bowl, which has plenty of sweet, tropical flavor. Some of my other favorite dairy free yogurts are Forager,  Nancy's, So Delicious, and Kite Hill.

    If you aren't vegan, this is also delicious with a generous drizzle of fresh honey. Some other variations I enjoy are made by replacing the fresh fruit with dragon fruit and banana, fresh mango slices, passion fruit, and strawberry yogurt with lemon zest. If you aren't a fan of yogurt, give my smoothie bowl a try. It's a great way to introduce kids to a new fruit they might have not tried yet.

    • Scoop your yogurt in to a bowl, and layer your fruit on top.
    • Sprinkle coconut over the top of it and garnish with lime zest.

    Easy Strawberry Blueberry Compote

    Compote may sound like something fancy, old fashioned, and complicated, but it's really a very simple and delicious dairy-free topping that can be used for so many things. I love to use this recipe with pancakes, french toast, overnight oats, ice cream, chia pudding, dairy-free yogurt, toast, banana bread, and between cake layers. My favorite way to eat this is on top of my gluten-free pancakes with a dollop of coconut whipped cream. The options are practically endless. The best part is that it's made using fresh fruit, which means much less sugar compared to store bought toppings!

    I prefer the compote without the added sugar or just a touch of coconut sugar, but my son likes it sweeter with the full teaspoon of sugar. I scoop out my unsweetened servings before I add the sugar in. You can add the sugar at the end if you'd like to see which you prefer.

    Ingredients
     

    • 1 ½ cup strawberries washed, hulled and sliced
    • 1 1 /2 cup blueberries washed and checked for stems
    • freshly squeezed juice from one orange or lemon
    • 1 teaspoon sugar Optional. Coconut sugar, raw sugar, or organic cane sugar work great.

    Instructions
     

    • Stir your ingredients together in a small saucepan over medium heat.
    • When it starts to boil, reduce the heat and use a wooden spoon or potato masher to break up the fruit a bit. I prefer bigger chunks of fruit, but you can mash to your desired texture.
    • Continue to cook the compote over a low heat for about 10 minutes.
    • Let it cool and store leftovers in a covered jar.

    Quiche is a food that reminds me of my grandma and is something that I hardly ever make. My son is ten years old and never had quiche in his life before I made this, but for some reason I recently had a big craving for it.  This dairy-free quiche is delicious served as breakfast, lunch, or dinner, and leftovers reheat very well. I like to prep this ahead of time for an easy weekday breakfast, or a quick lunch with a side salad. My favorite part of this recipe is that it's loaded with bacon flavor, but there are only 4 slices in the whole recipe.

    • 1 frozen 9 inch pie crust I used this kind that came in an aluminum, oven ready pie container
    • 4 slices cooked bacon chopped
    • half of a small onion about ⅓ cup, sauteed in 2 teaspoons olive oil or your favorite dairy free butter
    • 6 eggs
    • 1 cup unsweetened almond milk
    • 1 teaspoon salt
    • 1 teaspoon pepper

    Instructions
     

    • Preheat your oven to 375°F . Place your pie crust on a cookie sheet.
    • Whisk your eggs, almond milk, salt and pepper in a large mixing bowl.
    • Gently stir in your bacon and onion, and pour the mixture in to your pie plate.
    • Bake the quiche for about 35-40 minutes, until the top is lightly browned and the center is no longer jiggly.

    Vegan Bananas Foster

    If you're looking for something totally indulgent and delicious, these Vegan Bananas Foster Pancakes are for you. Hot fluffy pancakes are smothered in a sweet, caramelized banana topping for a breakfast that's over-the-top tasty. It's the perfect dish to make for a holiday breakfast, to impress overnight guests, or just because you're craving something sinfully delicious. The whole family will fall head over heels for this one and begin requesting it over and over again. Which is good news for you, because it's easy to prepare and well worth the effort.

    The banana topping is amazing on any of my pancakes, but my favorite pancake to use in this recipe is my Vegan Banana Pancakes (recipe included below). If you're looking for something gluten-free, you can try my Gluten-Free Banana Pancake recipe. If you're not vegan or would prefer a plain pancake, give my Fluffy Dairy-Free Pancake recipe a try. The topping is also great on oatmeal, nondairy ice cream, dairy free yogurts, or chia pudding.

    If there is a more heavenly dish than this, I have yet to try it. Brown sugar and butter combined with the flavor of warm banana and a hint of rum is a combination I never get tired of. Combine that with hot, fresh, fluffy pancakes and warmed maple syrup? Absolutely divine.

    Ingredients
     

    For The Bananas

    • 2 ripe bananas sliced
    • 1 cup brown sugar
    • ¼ cup vegan butter substitute I used Earth Balance
    • splash of rum or rum extract optional

    For The Pancakes

    • 1 cup all purpose flour
    • 1 tbsp brown sugar
    • 1 teaspoon baking powder
    • ¼ teaspoon salt
    • 1 pinch cinnamon
    • ⅔ cup nondairy milk I used unsweetened almond milk
    • 1 banana Ripe and mashed.
    • 1 tsp vanilla extract

    Instructions
     

    To caramelize the bananas:

    • Melt your butter substitute in a large nonstick skillet over medium heat.
    • Mix in your brown sugar. It will look pretty thick for a couple of minutes, but it should start to thin out.
    • Stir for about two minutes, and gently add your bananas.
    • Once you stir this for about a minute, your sugar should dissolve in to a syrup. If you need to, you can add an additional spoonful or two of butter substitute to thin it out.
    • Let it all bubble together for another two minutes.

    Vegetables are a food that I am constantly trying to eat more of, and having them at breakfast is a great way to start the day. This Dairy Free Spinach Mushroom Omelette is a simple make-ahead breakfast that's loaded with vegetables, and it tastes delicious. It keeps in the refrigerator for a few days, making it a great dish for busy weekday mornings. Serve it with a side of fresh fruit, your favorite toast, or on an english muffin.

    Dairy Free Spinach Mushroom Baked Omelette

    makes 4 servings

    8 eggs
    5 ounces baby spinach
    8 ounces sliced mushrooms
    ½ cup diced onions
    1 tablespoon olive oil
    salt and pepper to taste

    Preheat your oven to 350°F. Heat your oil in a large, nonstick skillet over medium heat. Saute your onions and mushrooms until they just start to turn brown, stirring occasionally. Stir in your spinach and saute until just wilted. Season with salt and pepper to taste.

    Prepare a pie plate or 8 x 8 inch baking dish with nonstick cooking spray, or oil the dish lightly with your olive oil. Spread your vegetables evenly on the bottom of the pan. Whisk all of your eggs in a separate, large bowl. Season with salt and pepper, and pour the eggs evenly over the vegetables. If you have a nondairy cheese that you like, you can spread about ¾ cup over the top (optional).

    Bake for about 20-25 minutes, until the eggs puff up and are cooked in the middle.

    We love pancakes in my house, and I love to make healthy versions when I can. This recipe for gluten free pancakes fits those requirements perfectly, and it's one I turn to over and over again. They're naturally sweet, delicious pancakes that are full of banana flavor and kid approved.

    The pancakes are dairy free, gluten free, refined sugar free, can also be made nut free. They're simple to prepare and also freeze wonderfully! I like to make a double batch and keep leftovers in the refrigerator for a few days for busy weekday mornings.

    Refrigerated leftovers can be reheated in the toaster or the microwave for about 45 seconds. Frozen pancakes can be heated in the microwave for about a minute and a half depending on your microwave.

    These are great served with some fresh berries and Coconut Whipped Creme, maple syrup, or sugar-free syrup if you're watching your carbohydrate intake. For extra protein I like to serve them with a side of chicken or turkey sausage, or some bacon.

    • Set cooked pancakes aside and continue cooking the remaining batter in batches.

You only need 5 minutes to prepare them for an easy, quick, delicious breakfast that's ready for you when you wake up in the morning.

    If you're looking for a quick breakfast option, these oats could not be more simple. There's no cooking required, and preparation and cleanup couldn't be easier. This is a great option to grab and go, or if you're short on time in the morning.

    The oats are soaked overnight until they absorb all the liquid and become tender and soft. I use almond milk, but feel free to use the milk of your choice. I add real pumpkin in this recipe with warm pumpkin spices to add plenty of natural flavor to the oats. A touch of maple syrup helps sweeten it all up a bit.

    Leftovers are a busy mom's best friend, and these dairy free baked eggs are just one example.

    I'm on a quest to eat more veggies, and I'm trying to incorporate them more at breakfast. This dish is great because you can use leftover veggies that you have from the night before, throw them in a dish, crack some eggs on top and bake. It works great with kale, brussels sprouts, tomatoes, peppers and onions, zucchini, or mushrooms. You can also top it off with some crumbled bacon, or a little bit of buffalo sauce!

    Feel free to double or triple this recipe to feed the whole family or overnight guests.

    Dairy Free Baked Eggs with Potato and Spinach

    serves one

    1 cup sautéed spinach
    ½ cup roasted potatoes with garlic
    2 eggs
    salt and pepper to taste

    Preheat your oven to 350°F and spray or grease a small baking dish (a 15 -18 ounce dish like this one will work.)

    Spread your spinach evenly on the bottom of the dish. Layer your potatoes over the spinach, then crack your eggs next to each other over the vegetables. Season with salt and pepper, and bake for about 30 - 35 minutes. I like my yolk a little runny, so I usually take it right around 30 minutes.

    I really love a traditional margarita, but I don't love all the sugar. This Keto Friendly Margarita is my go-to skinnier version, made without sugar and all the junk in those pre-made mixes. It's my go-to summer cocktail because it's cold, refreshing, and full of bright lime flavor. Summer nights on the porch with one of these in my hand is my favorite way to end the day after running around between summer camps, playdates, and the local pool.

    I usually make this at home without any sweetener or orange juice, but I do add it for company. The orange juice adds in more citrus flavor and helps give it that margarita color without artificial mixers. Occasionally I'll switch it up and add a splash of pineapple or pomegranate juice for a bit of variation.

    I like these on the strong side, but feel free to reduce the tequila to 6 ounces if it's too much for you. I top it with a splash or two of seltzer for a little bubble, which I suppose would technically make this a margarita spritzer, but who cares when it's this delicious and refreshing.

    I prefer reposado tequila, but silver also works great in these margaritas. Some of my favorite tequilas are Espolòn, Milagro, and Teremana. Feel free to use your favorite!

    • Run your lime wedges around the edges of your glasses. Roll the glasses over a plate covered in salt.
    • Pour the margaritas and ice into the glasses, and top with a splash or two of seltzer. Garnish with limes.

    • Use a serrated knife to cut your tomatoes. It's easier to cut through the skin this way!
    • Be sure to spray or oil your baking dish or the eggs will stick to the dish.
    • Don't overbake the dish or your eggs will be dry.
    • Be sure the middle is cooked through. You can use a steak knife to cut a small slit in the middle. If it comes out clean the eggs are done. They shouldn't be jiggly in the middle.
    • One slice of this takes about a minute and thirty seconds to reheat in my microwave. I recommend starting there then adding more time if needed. If you reheat them too long, the texture may become rubbery.

    I have a Trader Joe's obsession lately. Nope, they didn't pay me a dime to write about them, I'm just really enjoying some of their products these days, and I wanted to share them with you.

Yes, I should make my own dressing, and I often do, but sometimes I'm just too dang busy to lug out the food processor or chop fresh herbs. Finding store bought dressings that are somewhat healthy is hard. They can be full of preservatives, or oils, or the devil itself.....SUGAR. This dressing meets all my requirements, and it tastes pretty awesome too.

    Dairy-free blueberry muffins (vegan)

    I know, there are a million recipes out there for blueberry muffins, and some of them are even dairy-free or vegan. So why am I posting ANOTHER dairy-free blueberry muffin recipe? Well this one uses simple ingredients that you probably already have in your pantry. No milk substitutes, no vegan butters, just plain old flour and a few other ingredients.

    This is a simple, go-to, basic muffin recipe. Feel free to mix it up by replacing the blueberries with strawberries, or even some cherries and chocolate chips!

    Dairy-Free Blueberry Muffins (vegan)

    makes 12 muffins

    1 cup water (You can use a dairy-free milk if you'd like, but you don't need to.)
    2 cups all purpose flour
    2 ½ teaspoons baking powder
    ¼ teaspoon baking soda
    ½ teaspoon salt
    ½ cup plus 2 tablespoons sugar
    ¼ cup plus 2 tablespoons oil (I used coconut oil)
    1 teaspoon vanilla extract
    1 cup blueberries

    Preheat your oven to 375°F. Grease or oil a 12 cup muffin tin and set aside.

    Combine your dry ingredients in a large mixing bowl. Create a well in the center and pour in your wet ingredients. Stir just to combine, then gently fold in the blueberries.

    Add your muffin batter to the tin, filling each cup about halfway. Bake for about 20 - 25 mins, or until baked through and lightly browned.

    I love fresh lemon, and this Vegan Lemon Cake recipe is one of my favorites because it's bursting with fresh lemon flavor, easy to prep, and contains ingredients that you probably already have in your kitchen. It's accidentally vegan, and popular with both kids and adults. This rarely lasts longer than 48 hours in my house, and I've served it so many different ways on holidays.

    You can serve this cake as-is per the recipe, or try topping it with a fresh berry compote and some nondairy whip. It's great for entertaining, bake sales, potlucks, summer barbecues, or served with a hot cup of tea. It also makes a great addition to your brunch table, alongside my Creamy Fruit Salad.

    This is a great recipe to let the kids help with the cooking and get involved in the kitchen. My little guy loves juicing and zesting the lemons, and it's a great way for him to practice his measuring and fractions. It's also a big hit because it doesn't contain eggs, which means he gets to lick the spoon when we're done mixing!

    If you can't have coconut oil, any neutral flavored oil should work. You can also substitute the flour with a 1-to-1 gluten free replacement if needed.

    For the cake:

    • 2 cups all purpose flour
    • 1 ½ teaspoon baking powder
    • ¾ teaspoon salt
    • ¼ teaspoon baking soda
    • 1 cup sugar vegan if necessary
    • ¾ cup water
    • ½ cup applesauce
    • ¼ cup coconut oil
    • ¼ cup fresh lemon juice
    • zest from 1 large lemon or 2 small
    • 1 teaspoon pure vanilla extract

    For the icing:

    • ½ cup powdered sugar vegan if necessary
    • 1 tablespoon fresh lemon juice

    Instructions
     

    • Preheat your oven to 350°F and spray or grease a 9 x 5″ loaf pan.
    • In a large bowl, combine all of your dry cake ingredients. Create a well in the center, and add in all of your wet cake ingredients. Stir to combine, just until smooth. Don’t over mix the batter or your cake will be tough.
    • Pour the cake batter in to your prepared pan, and bake for about 50 minutes, or until a tester comes out of the center clean.
    • Let the cake rest on a wire rack until completely cooled. In a small bowl, whisk together your icing ingredients until smooth. You can ice your cake in the pan, or remove the cake to a separate dish and ice it.
    • Will keep covered at room temperature for 4-5 days.

    Slow Cooker Chicken For Tacos

    This dairy-free taco chicken is a weekly go-to for me because it's so easy to prep, and there are plenty of leftovers to pack for lunches. It has all the smoky Mexican flavor, without being too spicy for the kids.

    Dairy Free Slow Cooker Chicken

    You can serve this in a lettuce wrap, salad, tacos, or in a burrito bowl. It's great with my Easy Taco Rice, or make it low carb by serving it with some cauliflower rice or roasted vegetables.

    My favorite toppings for this chicken are shredded lettuce, diced tomatoes, minced onion, chopped cilantro, a squeeze of lime, and a few drizzles of Cholula sauce. Leftovers will keep (covered) in the refrigerator, so this is great for meal prepping and batch cooking.

    I use this taco chicken all the time to make these tasty burrito bowls. Just add some of the shredded chicken to your bowl with some beans (I love these ones from Fillo's), a healthy handful of greens, tomatoes, avocado, a generous drizzle of taco or Cholulah sauce, and some chile lime crema. You can use it for meal prep by packing your chicken and beans ahead of time, then add your vegetables the day you're ready to eat. So good!

    An easy recipe that makes dinner time a breeze. It's healthy, flavorful, and can be used in so many things from tacos to burrito bowls.

    Ingredients
     

    • 2 cups unsalted chicken stock I like this one
    • 3 lbs boneless skinless chicken breast
    • 2 tablespoons chili powder
    • ½ teaspoon garlic powder
    • ½ teaspoon onion powder
    • ½ teaspoon oregano
    • 1 teaspoon paprika
    • 3 teaspoons cumin
    • 1 teaspoon salt
    • 2 teaspoons pepper

    Instructions
     

    • Pour the chicken stock in to the bottom of your slow cooker. Add in your chicken.
    • Combine all of your spices in a small bowl, and sprinkle over both sides of chicken.
    • Cook on high for 4 hours or low for 8 hours.
    • Shred the chicken, and stir it well in the slow cooker with the stock and spices.
    • Turn off the cooker and let the chicken sit covered for another 30 minutes, stirring occasionally. Taste for salt, and add in another ½ teaspoon if needed.

    Notes

    My favorite way to enjoy this is in a burrito bowl with yellow rice, diced tomato, sliced avocado, green onions, a squeeze of lime, a very generous garnish of chopped cilantro, and a drizzle of spicy taco sauce.

    Dairy-Free Egg Casserole

    Dairy Free Breakfast Casserole

    If you need a dairy-free egg casserole to feed a crowd or something to prep for busy mornings, this Dairy Free Egg Casserole is the perfect dish. I've made this for Christmas, Easter, brunch, and as a meal prep for busy weekday mornings. You can also swap the sausage for chopped bacon or ham if you'd like.

    For vegetarian options, you can replace the sausage with more chopped vegetables like spinach, mushrooms, asparagus, tomatoes, or a combination of all of them. On Christmas I like to use half green pepper and half red to make it look festive. You can always add in about ½ cup of your favorite dairy-free shredded "cheese" if you'd like.

    To prep this dish the night before, you can cook the sausages and the vegetables, and refrigerate them overnight. Assemble and bake your casserole in the morning.

    Leftovers will keep in the refrigerator for a few days, and you can reheat individual slices in the oven or the microwave.

    Ingredients
     

    • 1 pound breakfast sausage
    • 16 oz shredded hash browns I used frozen ones and thawed
    • 8 eggs
    • ½ cup water neutral tasting, unsweetened dairy-free milk can be used like rice or almond
    • 1 onion diced
    • 2 red bell peppers diced
    • 1 tablespoon olive oil if needed
    • salt and pepper to taste

    Instructions
     

    Cook the sausage

    • Cook your sausages in a large skillet over medium heat. Remove the sausages when cooked, and place on a paper towel lined plate. Let them sit for a minute or two, then dice and set aside.

    Cook the vegetables

    • Add a tablespoon or two of oil to the pan if it’s too dry. Sauté your peppers and onions in the sausage grease and/or oil until onions just start to brown.

    Prepare the casserole

    • Preheat your oven to 350°F.
    • Spray or grease a 9 x 13 inch baking dish. Layer your hash browns, sausages, and cooked vegetables.
    • In a large bowl, scramble your eggs with your water or dairy-free milk. Season with salt and pepper and pour evenly into the pan over the sausage and vegetables.
    • Bake for about 30 minutes, or until center is cooked through. Serve warm, or let cool completely and refrigerate to reheat later.

    Meal Prep Vegan Oats

    Dairy Free Steel Cut Oats

    Oats are one of my favorite things to meal prep for a quick, healthy breakfast. My mornings are busy with lunch making, homework packing, and school dropoff, and that often means that I forget to feed myself. Having these vegan oats already prepped in the fridge means that I can have a healthy meal ready for myself within minutes.

    I like to cook my oats with water, and on occasion I'll use a dairy-free milk (usually almond) for a bit more creaminess. My favorite toppings are strawberries, blueberries, and sliced almonds, but the options are really limitless.

    Some other things you can add to your oats are:

    a dash of cinnamon and a handful of raisins

    fresh blueberries and a bit of lemon zest

    pumpkin, pumpkin pie spice, and a drizzle of maple syrup

    peanut butter and some sliced bananas

    unsweetened cocoa and fresh strawberries

    chia seeds and fresh kiwi

    fresh mango and some coconut flakes

    fresh pineapple and some coconut flakes

    vegan chocolate chips an sliced bananas

    a sprinkle of cardamom and sliced cherries

    Meal Prep Vegan Oats

    makes 4 servings

    4 cups water (or your favorite dairy-free milk)
    1 cup steel cut oats
    pinch of salt (optional)

    Bring your water to a boil in a medium saucepan. Stir in your oats and reduce the heat to a medium low. Simmer the oats uncovered for 25-30 minutes, stirring occasionally, until the liquid is absorbed and the oats are tender and creamy.

    Store your oats in the fridge for 3-5 days. You can reheat them in the microwave for about 45 seconds on high (per serving), and top with your favorite fruits and/or nuts.

    Herbed Cucumber Salad

    Vegan Herb Cucumber Salad

     

    This Herbed Cucumber Salad is the perfect way to use up those summer cucumbers and herbs from the garden. Enjoy it as-is, or top it with some crumbles of toasted pita bread. You can enjoy this as a simple side dish, and it's great alongside my Simple Pulled Pork. To make it into a filling, healthy meal, add in some leafy greens and ¼ cup garbanzo beans.

    Fresh lemon juice is best in this recipe, and I wouldn't recommend using bottled. The brightness of the lemon pairs deliciously with the fresh herbs and vegetables. A good quality olive oil will also make a notable difference in this dish. Fresh, crispy herbs are pretty much the star in this salad, adding plenty of bright, savory flavor.

    You'll want to eat this salad right away. The leftovers don't keep well, as the salt draws the juices out of the cucumbers. You probably won't have any leftovers, anyway!

    Dairy Free Vegan Pineapple Cobber

    Pineapple is the perfect summer fruit. It's versatile, sweet, tropical, and it's also pretty cool looking. I love pineapple raw, but it can also be whipped from frozen to create an "ice cream" (think Dole Whip),  used in smoothies with fresh mint, or added to baked goods. It's loaded with vitamins and minerals, and also contains an enzyme called bromelain, which might play a role in a range of different health benefits.

    If you like pineapple, you'll love this recipe for Vegan Pineapple Cobbler. It's easy to make, sweet, fruity, and free from dairy and eggs. This is great for entertaining, and I like to top it with some homemade whipped coconut cream. It's like a piña colada in cake form, and makes an amazing spring or summer dessert. Adult and kid approved!

    NOTE: If you don't have self-rising flour, you can substitute with 1 cup all purpose flour, 1 ½ teaspoons baking powder and ¼ teaspoon salt.

    Dairy-Free Cornbread (vegan)

    Chili is one of my favorite weeknight meals to make because it's easy to prep and I can make it in the slow cooker. I can't resist serving it with a side of good dairy-free cornbread. While most cornbread recipes contain eggs and milk, this one uses just 5 ingredients and no egg or milk substitutes. My nine-year-old loves this recipe and insisted that I needed to share it, so here it is!

    A note: If you don't have self-rising flour, you can use all purpose flour and add 1 teaspoon of salt and 1 tablespoon of baking powder.

    Dairy-Free Cornbread (vegan)

    makes about 12 pieces

    1 ¼ cup self-rising flour
    ⅔ cup sugar (vegan if needed)
    1 cup cornmeal
    ⅓ cup oil (I used coconut oil. Canola would also work)
    1 ¼ cup water

    Preheat your oven to 400°F. Grease or spray and 8 x 8 baking dish. In a large bowl, combine all the dry ingredients. Create a well in the center, and add in your oil and water. Stir just until combined and smooth. Try not to overmix it.

    Bake for 20 - 25 minutes, until a toothpick inserted into the center comes out clean.

    Enjoy this with a hot bowl of my Vegan Quinoa Sweet Potato Chili or Kid-Friendly Turkey Chili for a hearty, filling meal.

    Dairy Free Banana Cake (vegan)

    Vegan Banana Cake

    This dairy-free banana cake is a cross between a light cake and a dense banana bread. Kids go BANANAS for it! It's great as-is for lunchbox snacks, but my favorite way to eat it is topped with dairy-free coconut whipped cream, sliced bananas, and a drizzle of dairy-free caramel sauce from Hey Boo. You can also mix in chocolate chips, nuts, or a handful of shredded coconut. It's easy to make, uses only one bowl, and is also vegan. You can double the recipe, cut it into squares and freeze some for later, too! 

    I use coconut oil in this cake, but feel free to substitute with any light tasting oil or your favorite vegan butter. It's important to mix the batter just until the ingredients are combined. Overmixing will cause your cake to have a tough, unpleasant texture.

    The cake will keep on your counter at room temperature for a few days if tightly covered. Although, I doubt it will last that long!

    • Pour the batter into your prepared pan and bake for about 45 minutes, or until cooked through.
    • Enjoy the cake as-is, or top it with your favorite frosting, coconut whipped cream, or a powdered sugar glaze.

    Dairy - Free Coconut Whipped Cream (vegan)

    Coconut Milk Whipped Creme

    It can be hard to find dairy-free replacements for whipped cream and frosting, but coconut whipped cream does the trick! I've been making this for a few years now, so it's not a new or original idea, but a recipe I thought worth sharing. It works great for so many things. I love it as a simple frosting, with fresh fruit, in my Banana Pudding Pie, or to top a dairy-free hot chocolate.

    The most important step in making coconut whipped cream is choosing the right coconut milk/cream. Some stores are starting to carry full cans of straight cream. I've found cans at Whole Foods and Trader Joe's. Native Forest also has one available right here on Amazon. If you do use a full can of coconut cream, you'll need to double the amount of sweetener and vanilla that I listed below.

    If you're using a can of coconut milk, I've had good success using Whole Foods, Native Forest, Thai Kitchen, and Natural Value. The trick to using a can of coconut milk for this recipe is to refrigerate the can overnight and DO NOT SHAKE IT. If you don't refrigerate the can, you won't give the cream an opportunity to separate from the water. If there is any water in your cream, it won't whip up properly and will just fall flat.

    Making coconut whipped cream is fairly simple, but to be honest the results can come out different every time you make it. I've heard this countless times from others who have made it as well. You can do everything right and still have your whipped cream occasionally  flop. The results really do vary based on brand and even the individual can of coconut milk that you have. In our house a failed, flat whipped cream is still tasty and not wasted. But, if I'm making this for a special occasion I always have a backup can in the fridge.

    Powdered sugar is my sweetener of choice in this recipe, but you can also experiment with granulated sugar, honey, maple syrup, or powdered Stevia for a Keto option.

    Dairy - Free Coconut Whipped Cream (vegan)

    makes about 1.5 cups of whipped cream

    One 15 oz can of full-fat coconut milk
    1 - 3 tablespoons powdered sugar (to taste. will depend on how sweet your coconut milk is)
    1 teaspoon vanilla extract

    Refrigerate your can of coconut milk overnight, or for a minimum of 6 hours. It needs to be well chilled. I like to also refrigerate my mixing bowl and whisk attachment for about 15 minutes before I make this.

    Take your can out of the refrigerator, being very careful not to shake it, turn it, or slosh the water around. Take off the top of the can, and carefully scoop the solidified cream out, being careful not to scoop up any of the water at the bottom of the can. You can save the water to use in other recipes.

    Add the cream to your chilled bowl and whip it with your whisk attachment on medium speed for 2 -5 minutes. The cream should get light and fluffy with soft peaks. 4 minutes is usually my sweet spot, but it varies depending on the can you have. Add in your sugar and vanilla, and whip until combined. Taste for your desired level of sweetness.

    I like to use this immediately, but it will keep in the fridge for a few days. If it hardens again after refrigeration,  you can give it another whip.

    There is something about the smell of baking gingerbread that really gets me into the holiday season. When these were baking, my nine-year-old must have asked three times, "What are you making?! When can I eat it?! Why does it smell so goooooood?!".  These dairy free gingerbread muffins taste as good as they smell, too. No one will guess that they're dairy-free or vegan, and they're super easy to prepare. You may want to make a double batch.

    The Flour (and Gluten-Free Notes)

    I'm using all-purpose (white) flour in this recipe, which produces delicious results every time. I have not tested this recipe with gluten-free flour yet. To be honest, replacing all-purpose with gluten-free flour can produce varying results. If you'd like to try making these gluten-free, I'd suggest using the Bob's Red Mill 1-to-1 gluten free baking flour.

    The Oil

    I like to use avocado oil in my baked goods because it's a bit healthier and has a neutral taste. Canola and vegetable oil will also work here.

    Toppings

    I topped these with some turbinado sugar to give them a bit of sparkle, which you can sprinkle on top of the batter before baking. For a pretty, snowy look you can also sprinkle these with some sifted powdered sugar once the muffins are cooled.

    • 1 ½ cup all purpose flour
    • ½ cup light brown sugar
    • 1 teaspoon baking soda
    • 1 teaspoon cinnamon

    • ¼ teaspoon cloves
    • ½ cup blackstrap molasses
    • ½ cup ginger ale
    • ⅓ cup avocado oil canola or vegetable works too
    • 2 tablespoons apple cider vinegar
    • 2 teaspoons vanilla

    Instructions
     

    • Preheat your oven to 350°F and grease or spray your muffin tin.
    • In a large bowl, mix together your dry ingredients, breaking up any lumps.
    • Make a well in the mixture, and add in your wet ingredients. Combine just until the batter is moist, and avoid over-mixing.
    • Fill each muffin cup halfway with your batter.
    • Bake 15-20 minutes, until baked through.
    • Let the muffins cool for ten minutes in the tin on a wire rack. Remove them from the tin and allow them to finish cooling on the rack.
    • These are great served as-is or sprinkled with powdered sugar.

    Vegan Wild Rice Recipe

    This vegan wild rice stuffing is a healthier alternative to traditional stuffings, and it happens to be vegan! Everyone loves stuffing during the holidays, but not everyone loves the calories and carbohydrates that come with eating all that bread. This recipe is a delicious alternative to traditional stuffing, and your gluten-free guests will be able to enjoy it as well. For added crunch, you can top it with some slivered almonds or pecans. It works great in stuffed squash recipes, or as a side to roasted cauliflower or vegan lentil loaf. Makes a perfect holiday side, or enjoy any time of year! Leftovers will keep in the refrigerator for about two days.

    Vegan Wild Rice Stuffing (Gluten-Free)

    makes 6 - 8 servings

    1 apple, peeled, cored, and diced small
    ½ onion, peeled and finely chopped
    2 stalks of celery, finely chopped
    a tablespoon or two of olive oil
    8 oz mushrooms, finely chopped
    ¼ teaspoon dried thyme
    1 cup wild rice (I like this one)
    1 ½ cup vegetable stock
    1 bay leaf
    ¼ cup dried cranberries
    salt and pepper to taste

    In a medium sized pot, heat your oil over medium heat. Add your onion, celery, and mushroom. Cook until everything is soft and mushrooms are brown. Season to taste with salt and pepper.

    Add your rice, and stir for one minute. Pour in your vegetable stock, and give it a good stir. Add your thyme and bay leaf, cover, and bring to a simmer. Reduce the heat to low, and cook until the rice is soft and cooked (about 20 minutes). Remove your bay leaf, add your apples and cranberries, and let sit for about ten minutes. This will let the fruit soften without it becoming mushy. Season to taste with salt and pepper if needed.

    If you're looking for chili that will get the approval of the whole family, this kid-friendly turkey chili checks all the boxes.     My eight-and-a-half-year -old is currently boycotting chicken. Unless it's in the form of a nugget or a patty, he's not touching the stuff. I've been trying to prepare it in different ways that he might like, and this was one dish that he actually gobbled right up. When I told him it was "pizza chicken" he perked right up. "Chicken that tastes like pizza? I'm in." Nothing groundbreaking here, but if it works for my kiddo, maybe it will work for yours too! (Note: This tastes great without cheese, but feel free to toss some of your favorite dairy-free shreds over the top.)

    Dairy-Free Pizza Chicken Skillet

    serves 4

    1 lb chicken tenderloins
    24 oz marinara
    3 cloves garlic, peeled and smashed
    a sprinkle of dried oregano
    ¼ cup diced pepperoni (this one is my favorite)
    1 tablespoon olive oil
    ¼ cup diced onion
    ¼ cup diced green bell pepper
    salt & pepper to taste

    Heat the oil in a large, deep skillet over medium heat. Cook your onion and green pepper for about 5 minutes, or until the onions are soft and translucent. Push your vegetables to the sides of the pan to make room for the chicken. Season your chicken with salt and pepper on both sides, and brown in the oil. When both sides are lightly browned, add your garlic and oregano and stir for one minute. Add your marinara and lower the heat to low. Stir in your pepperoni, and continue to cook over low heat for about 20 minutes. Season with salt and pepper if needed.

    For low-carb options, serve with a side of vegetables or spaghetti squash. This is also great served with mashed potatoes, pasta, rice, or a big piece of crusty bread.

    Favorite Dairy Free Green Smoothie

    Smoothies are my favorite "fast food" to make at home. You can make them sweet and dessert-like, or super healthy and full of greens. They're a great way to meet your daily servings of fruit and vegetables, and kids often love them!

    This is my favorite dairy-free green smoothie, and I usually blend a batch to have in the refrigerator for a few days. I like to have this one for breakfast, with a couple of hard boiled eggs. If it tastes a little too "green" to you, try adding a bit more pineapple.

    My Favorite Dairy-Free Green Smoothie

    makes 3 smoothies

    16 oz water
    juice of 1 lemon
    5 - 6 ounces baby spinach, washed
    half of an english cucumber 
    3 stalks of celery, cleaned and trimmed
    2 cups frozen pineapple chunks

    Add all ingredients to a high powered blender (I use this Vitamix) in the order listed. Gradually work up to high speed, using the plunger as needed. Blend until smooth. Leftovers will keep in the fridge for a few days.

    I've been shopping at Whole Foods for a few years now, and it quickly became my favorite place to shop. While I love a visit to Wegmans, the ease of online ordering, grocery delivery, and the healthy options available at  Whole Foods have really won me over. These are some of my favorite dairy free items that I've come to love over the years, with lots of gluten free and vegan options, too.

    Whole Foods Dairy Free Hostess Cupcakes

    These are definitely my favorite find. I found them in a freezer near the bakery, and they're free of top 7 allergens: dairy, gluten, eggs, fish, shellfish, soy, and peanuts. I was not expecting these to be as good as they are, and they actually do taste similar to a Hostess cupcake. I like that they are mini-sized to keep my portion control in check. According to the website, these are now called Mini Mo's, and the recipe has changed. You can find more info here.

    Pizza is a hard food to replace if you can't eat dairy, but Daiya created this amazing option that tastes as close to the real thing as you can get. Not only is it dairy free, but it's also free from soy and gluten, as well as being vegan. This is the top choice for pizza in our house. The cheese melts perfectly, the crust bakes soft and slightly crisp, and the plant based meat has a flavor and texture very similar to the real thing. If you haven't tried a Daiya pizza yet, I highly recommend them.

If you're looking for an alternative to traditional butter, this brand offers delicious options that come in both tub and stick form. This is one of my favorite brands, and if you follow me on Instagram you've probably seen their products in my Stories. All Siete's products are gluten and grain free, and are made from simple, wholesome ingredients. They quickly became a weekly go-to for me, and you'll see more products from them later on in this list.

    My favorite gluten free crackers at Whole Foods are these pita crackers from Simple Mills. They contain no artificial ingredients, and they're a processed food that I feel a tiny bit better about eating. They're salty, crunchy, and hold up pretty well to a scoop through the hummus.

    If salty sweet and crunchy combos are your thing, you'll love these Churro Strips from Siete. These are grain free, gluten free, dairy free, and so good. I'll enjoy a few of these to satisfy that afternoon sweet tooth, and they're also amazing with chocolate hummus or fruit salsa.

If you're looking for a good boxed version, this Deluxe Cheeze Mac by Daiya is my favorite option. It comes with a premade cheese packet similar to Velveta, which melts in to a smooth, creamy, cheesy sauce. This is also free from gluten and soy, which makes it a great choice for families with multiple dietary restrictions.

    Applegate is a brand you'll see a few times on this list, and their chicken nuggets are my go-to option. They're easy to prepare, crispy, flavorful, and of course popular with the kids. They also offer a gluten free option if you need it.

    These gluten free chicken tenders have been a favorite in our house for a couple of years now. I bake these in the air fryer to get them extra crispy, and they're always popular with both the adults and kids.

    These chicken patties are a delicious, healthy option to have on hand. They're available in the frozen section of the store, and require just a few minutes of cooking time. I like to serve them on a gluten free bun with a side salad.

    You won't find a lack of gluten free breads at Whole Foods, but Udi's is my favorite. There are a few different bread options to choose from, and the burger buns are great. Check the frozen bread section of the store for these options.

    Dairy Free Gluten Free Chinese Food

    If you have a craving for Chinese food but can't have gluten or dairy, these three items are how I fulfill those cravings. You can find all three of these in the frozen foods section of the store, and they're all delicious. Primal Kitchen has a few frozen meal options that I like, and this chicken fried riced cauliflower is one of them. It has lots of veggies and good sized chunks of chicken, with a good amount of Asian flavor. If cauliflower rice isn't your thing, the veggie fried rice from 365 brand is also a great one to try. Feel Good Foods is an amazing gluten free brand that I find myself buying pretty frequently. I'm usually happy with the healthier ingredients, and the flavor and texture are usually on point. Just be sure to always read the ingredients because some of their items do contain milk.

    These gluten free coconut shrimp are one of my most favorite finds. They're available in the freezer section of the store, and they're ready to eat in under 30 minutes. I've served these to a handful of gluten-loving folks, and everyone always comments on how tasty they are. They're great to have on hand in your freezer for a last minute appetizer, after school snack, or part of a quick dinner option. There's also a Boom Boom option available if coconut isn't your thing.

They're not only dairy free but gluten free, too, and work great for meatball sandwiches should you find yourself with a house full of hungry teenagers.

    Whole Foods has a pretty great selection of dairy free cheeses to choose from. Some of my favorites are Daiya, Violife, Miyoko's, and Kite Hill.

    Violife is one of my favorite dairy free brands, and one that I always recommend to people just starting out on their dairy free journey. Their cheeses have flavor that is as close to the real thing as you can get. The texture and ability to melt is better than most other nondairy options I've tried, and there are a variety of options to choose from. They offer shreds, slices, shreddable mozzarella and parmesan, feta, and cream cheese. This brand uses no GMO's, preservatives, gluten, or weird ingredients you can't pronounce.

    Kite Hill is another brand that I absolutely love for their nondairy options. I've used this cream cheese alternative many times for baking, and the results are always very similar to what I get using traditional cream cheese. This cream cheese has a bit more tang than Violife's, and has all the smooth, creamy texture you'd expect out of a cream cheese.

    Nothing groundbreaking here, but these vanilla sandwich creme cookies are dairy-free and kid approved so you can't go wrong. Think vanilla Oreo's with slightly better ingredients. They're made by Whole Foods store brand, 365, and were reasonably priced at $2.99.

    Siete is a brand that I've mentioned before, but they're grain free cookies are very worthy of mentioning. Made from a nut base with healthier ingredients, these will satisfy your sweet tooth without filling you with junk ingredients. They're offered in a few different flavors like Mexican Shortbread, Mexican Chocolate, and Mexican Wedding.

    If you like coconut as much as I do, these cookies from Emmy's Organics will knock your socks off. They're sweet, soft, and absolutely delicious. There's no gluten or dairy in these, and there are a few flavor options to choose from. Look for them in the cookie aisle.

    Whole Foods Dairy Free Marshmallows

    Another item that you've probably seen at other stores, Dandies natural marshmallows are worth finding if you haven't already. They're made without high fructose corn syrup and gelatin, and are vegan and non-gmo project verified. No one will be able to tell the difference between these and your average store bought marshmallow, but you can feel better about the ingredients. They also make pumpkin and peppermint flavored, which is fun for a seasonal treat.

    Ingredients: Tapioca Syrup, Cane Sugar, Filtered Water, Tapioca Starch, Carrageenan, Soy Protein, Natural Vanilla Flavor. Contains: Soy. Gluten Free.

    I found these Heavenly Creme Cakes in the frozen section, and they're similar to Twinkies! They're free from gluten, dairy, nuts, and soy, and made in a facility certified to be free from those ingredients.  I found the creme filling to be a bit sweeter than in a Twinkie, but overall it's a good substitute. There is also a chocolate version available. Since they're frozen you need to thaw it for two hours before eating, or microwave it for ten seconds.

    CocoWhip by So Delicious. I love this brand and all of their products, and although they can be found almost anywhere now, CocoWhip is worth mentioning again. This is an easy dairy-free Cool Whip replacement, made without high fructose corn syrup, hydrogenated oils, gluten, soy, or gmo ingredients.

    What a treat this oat-based whipped topping is. It's creamy and sweet with a texture similar to the real thing, perfect for topping those hot chocolates.

    You'll find a large selection of cake and dessert mixes at Whole Foods (too many to list here), but this gluten free option from King Arthur is my favorite. It's moist, fudgy, rich, and no one will ever know it's gluten free. For another option, try the gluten free, dairy free option from 365.

    Make sure you stop by the bakery case when visiting the store, where you'll be pleasantly surprised with a decent selection of freshly baked dairy free desserts. The options vary depending on the season, but there's always something delicious available (like this lemon poppy cake)

    If your store happens to have these vegan peanut butter cookies in the bakery department, I highly recommend them. They're soft, chewy, full of peanut butter flavor, and absolutely addicting.

    Abe's is a vegan brand that you'll also want to be on the lookout for. This brand also makes cornbread and muffins, and all of the products are delicious. This doesn't contain milk, eggs, nuts, or soy, and it's school safe.

    I think you'll find the nondairy ice cream options at Whole Foods quite impressive. There are just too many amazing options to choose from, but pictured here are a few of my favorites. So Delicious, Jeni's, Good Pop, and 365 brand have amazing flavor combinations to choose from.

    I love these chocolate gems from Hu. They're free from refined sugars, so you can feel a little better about snacking on them. They're great by the handful if you just need a quick sweet treat, or to use in your favorite dessert recipe or baked goods.

    These dark chocolate peanut butter cups from Unreal are a guilty pleasure you don't have to feel so guilty about. They're smooth, nutty, sweet, and free from dairy and gluten.

    If you need an allergen friendly, dye free candy, look for the options from YumEarth. These Giggles candy bites are similar to Skittles, and my son loves them.

    Kids love corn dogs, and this is a tasty option that's free from both dairy and gluten. The ingredients are much less cringe-worthy when compared to the average corn dog, and they're made with 100% grass-fed beef. You can find them in the frozen section of the store, and they heat up fairly quickly in about 25 minutes.

    Hot dogs were one of those food items that I was shocked to learn could contain milk. Milk, in a hot dog?! It just doesn't seem like it belongs in there. Thankfully these dogs from Applegate contain no milk or gluten, and the ingredients are much, much better than your typical hot dog.

    This is by far my favorite gluten free pasta brand. Jovial produces delicious pastas made from brown rice, and the texture is far superior to other brands I've tried. They offer a variety of shapes and sizes from elbows to spaghetti.

    Fillo's beans have become a pantry staple for me. They come in a few different flavor options, all of which are mildly seasoned and appropriate for kids. I add these to everything from my eggs, to chicken wraps for lunch, to taco night on Tuesday. The ingredients vary depending on which flavor you choose, so be sure to check the packaging.

    These ramen from Mike's Mighty Good live up to the packaging claim....they do contain some insanely rich broth. Sadly these are not gluten free, but if you're a wheat consumer you're going to love these. My tween is a big fan, and they're easy enough for him to make on his own.

    If you're lucky enough to stumble upon this gluten free baguette, do yourself a favor and grab a few of them. These are a take and bake option that come frozen, but they aren't always available in my store. This is a fantastic gluten free option, and I'm crossing my fingers that I can find it again soon.

    dairy free korma

    This Cashew Korma is a creamy, flavorful sauce that helps get dinner together in just minutes. I add a pound of cubed chicken to this sauce and simmer until cooked, then serve it aside some jasmine rice and roasted vegetables. It's easy, delicious, and full of mild spices.

    This organic taco kit from Garden of Eatin' is my go-to for Taco Tuesday. The shells are crispy and delicious, and the taco spice is flavorful but mild for the kids.

    If soft tacos are your preference or you're looking for a grain free option, these tortillas from Siete will win you over for sure. I like them best when they're warmed up a bit, and use them for things like tacos, quesadillas, or wrap sandwiches.

    There are dozens of dairy-free yogurts to choose from at my local Whole Foods. I wonder at this every time I see it, thinking back to ten years ago when this was utterly unheard of. There are just too many to list here, but some of my favorites are Nancy's, Oatly, Siggi's, Forager, and Kite Hill.

    Dairy Free Probiotic Drink

    This drinkable yogurt is very tasty, especially if you're short on time or craving a smoothie. 

    Ingredients: Califia Farms Strawberry Yogurt Drink is delicious, dairy free and vegan. Our almond, coconut and oat base features the Califia Culture Blend: 10 billion live, active probiotic CFUs powered by BB-12™.

    If you need a protein drink that doesn't taste like chalk, these drinks from Koia are a great option. The chocolate peanut butter is my favorite flavor, but you'll find that all flavors are pretty tasty. These have an almond milk base, so they won't be safe for school if it's a nut-free zone. The ingredients vary depending on the flavor you choose, so be sure to read the packaging ingredients.

    There are a ton of nodairy milks to choose from at most Whole Foods stores, but this option from Malk is my favorite. It's creamy, nutty, and contains only 4 simple ingredients.

    dairy free cereal

    This has been my son's favorite cereal for years. The flavor is similar to Golden Grahams, but it contains a bit less sugar and healthier ingredients. This brand also has some gluten free options if you need it. Some of our other favorites you can find at Whole Foods include Forager, Nature's Path, 365 by Whole Foods, Three Wishes, and the Panda Puffs by EnviroKidz.

    If you want a Pop Tart type treat without the gluten or dairy, these toaster pastries from Bobo's are a great replacement. I did find these to be a bit pricey, but they're worthy of the occasional purchase.

    These apple pie oat bites from Bobo's were a HUGE hit in my house. My son begged me to buy more of these, and they were loved by everyone in the house. They're like mini apple pies with less sugar, and are great for school snacks.

    If you're able to eat gluten, well then you're in luck because these cinnamon rolls from Immaculate are dairy free and they are DELICIOUS. They're perfect for a weekend treat, brunch, Christmas morning, or just because you want one!

    And speaking of over-the-top delicious and sweet - be sure to check around the coffee shop and the bakery for freshly made vegan donuts. They are fantastic.

    paleo pancake mix

    If you're looking for a healthier breakfast option that still feels decadent, give this paleo pancake mix a try. You only need a few minutes and some water to make these, and they even won the approval of my tween pancake connoisseur.

    Ingredients: Cassava Flour, Organic Coconut Flour, Almond Flour, Eggs, Leavening (Monocalcium Phosphate, Sodium Bicarbonate), Salt, Monk Fruit, Spice.

    granola butter

    Granola Butter is a fun option, with a similar flavor and texture to nut butter, but it's school safe. It's great for topping toast, making sandwiches, pairing with fruit, or scooping on oatmeal.

    Truff Sauce

    If you like the flavor of black truffle, this Truff sauce is an interesting find. I use it on everything from hardboiled eggs to roasted chicken. It has an interesting combination of slightly spicy, slightly acidic flavor, with a bit of truffle and  a touch of sweet.

    Strawberry Chia Oatmeal

    Strawberry Chia Oatmeal

    This is my go-to, clean eating breakfast when I'm short on time. If you prefer your oatmeal a little sweeter you can drizzle it with a bit of raw, local honey. You can also top it with a few raw, chopped nuts for added protein.

    Strawberry Chia Oatmeal

    ½ cup old fashioned oats
    1 cup water
    2 teaspoons chia seeds
    5 or 6 strawberries, sliced

    In a medium bowl (a deep cereal bowl works well) combine the oats and water. Microwave about 4 minutes on 50% power. Cooking times will vary depending on your microwave, so watch for overflowing and cook for an additional minute if needed. When the oats are cooked, stir in the chia seeds and let it sit for two minutes. Top with the strawberries, and enjoy!

    Easy Dairy-Free Pasta & Sausage

    serves 6

    48 oz marinara sauce
    1 lb ground sausage (sweet italian sausage is kid approved in our house)
    16 oz box of pasta (I used farfalle)
    chopped fresh parsley for garnish (optional)

    Cook your pasta according to the package directions and drain. In a large, deep skillet, brown your sausage over medium heat. Reduce the heat to low and stir in your marinara sauce. Cook over low heat for at least 20 minutes (the longer it cooks the more flavorful it will be).

    Stir in your cooked pasta, garnish with parsley, and serve.

    Vegan Carrot Mini Muffin

    Vegan Mini Carrot Muffins (Dairy, Egg, and Refined Sugar Free)

    makes 24 mini muffins

    1 ½ cups whole wheat flour
    ½ cup maple syrup
    ¼ cup raisins
    2 teaspoons cinnamon
    ½ teaspoon nutmeg
    1 teaspoon baking powder
    1 teaspoon baking soda
    ¼ teaspoon kosher salt
    1 cup unsweetened applesauce
    1 banana, mashed
    1 cup shredded carrots

    Preheat oven to 350°F and prepare your muffin tin with either spray or muffin liners. In a large bowl whisk together all of the wet ingredients. Stir in the remaining ingredients, except for the carrots and raisins. Once the wet and dry ingredients are well mixed, gently fold in the raisins and carrots. If you'd like, you can top with a few oats. Fill each muffin cup half way, and bake for about 20 minutes, until cooked through and slightly browned.

    Dairy Free Whole Wheat Blueberry Muffin

    We all need a go-to dairy-free muffin recipe, and this one is mine! This dairy-free blueberry muffin recipe uses whole wheat flour, no refined sugar, no oil, and plenty of blueberries. It's a great recipe to make with the kids, and you only need a bowl and spoon to whip the ingredients together. They bake beautifully with or without eggs, which gives you the option to easily make them vegan.

    These are a part of my weekly meal prep, and my little guy loves bringing them to school for a snack or as part of his lunch. They're nut-free, which makes them an easy, school-friendly lunchbox staple. I usually make a double batch and freeze half for when I need something in a pinch.

    I also love these muffins as an easy breakfast option for busy mornings. I usually have one with my favorite green smoothie, or alongside my baked spinach mushroom omelette. They're also a delicious addition to your holiday brunch table, or to have available for overnight guests.

    Ingredients
     

    • ½ cup 100% pure maple syrup
    • 2 tablespoons ground flax mixed with ¼ cup plus 1 tablespoon water if you can eat eggs, you can use 2 eggs instead
    • 1 cup unsweetened apple sauce
    • ¼ cup water
    • 1 teaspoon baking soda
    • 1 teaspoon vanilla extract
    • ½ teaspoon salt
    • ½ teaspoon cinnamon
    • 1 ¾ cup whole wheat flour
    • ⅓ cups oats plus some to sprinkle on top of muffins
    • 1 cup blueberries I used frozen

    Instructions
     

    • Preheat your oven to 325°F, and line or grease your muffin tin.
    • Mix your dry ingredients in a large bowl.
    • Using a fork, mix in your wet ingredients, but don’t overmix.
    • Gently fold in your blueberries using a spatula.
    • Fill each cup of your muffin tin about halfway. Sprinkle with more oats on top, if you’d like. 
    • Bake 20 – 25 minutes, or until tester comes out clean. Cool 5 minutes in tin on wire rack, then remove the muffins from the tin and cool completely on rack. 

    Notes

    Muffins will keep in a sealed bag or covered cake dish for a few days, depending on the temperature of your kitchen.
